Pig Rub

1 1/2 c Brown Sugar
1/4 c Salt
1/4 c Garlic Powder
1/4 c New Mexico Red Chile Powder
1/4 c Smoked Paprika
3 tbls Dry Mustard Powder
3 tbls Dry Sage
2 tbls Oregano
2 tbls Onion Powder
2 tbls Cumin
1 tsp Cayenne Powder (depending on heat in NM chile powder)

Cover ribs liberally, marinate ribs overnight. Smoke 4-5 hrs at 225 degrees
