Hollarado Green Chile
This is a flavorful, simple recipe that can easily be modified to suit your taste.
Ingredients:
2 lbs. cubed or stew pork
2 tbsp. minced garlic (about 3 cloves)
5 tbsp. flour
2 cups diced fresh tomatoes (you can substitute 1 14 oz can)
2 28 oz boxes of chicken broth
1 Beer – Suggested a strong IPA
3 ½ cups diced green chiles (about 30 chiles)
2 cups diced onion or 1 Large onion
1 Tbs. Pepper.
Salt, Pepper and Corn Starch to tasteInstructions:
Brown pork in skillet with garlic and pepper. Add flour and brown as well. Once brown add pork to crock pot, deglaze pan with beer.
In crock pot, mix pork, garlic, tomatoes, water, green chiles and onion. Simmer for at least 2 hours preferably overnight . Water can be added to thin down and flour or corn starch can be added to thicken. You can also cook it in a large pot on the stove at low heat.
Let simmer at least an hour before tasting and modifying by adding chiles, more tomatoes, garlic, etc.
I like my chili thicker, so I like to add corn starch 15 minutes before serving to thicken the stew. I then taste and add salt and pepper to taste.
Makes approximately 6 quarts. Serves 8-10.
